Ingredients
  1. 1 bunch asparagus cut into 1 inch pieces
  2. 1 head of broccoli cut into florets
  3. 1/2 cup of arugula and walnut pesto
  4. 454 g of pasta
  5. 1 cup frozen peas
  6. 1 cup of canned white kidney beans
  7. 1 cup of fresh arugula
  8. 1 can of artichoke hearts quartered
Instructions
  1. Preheat your oven to 425 F and line a baking sheet with parchment paper
  2. Toss the asparagus and broccoli with 2 tbsp of pesto and roasts in the oven for about 10 minutes
  3. Boil a pot of salted water and cook the pasta according to package directions. In the last minute of cooking, add the frozen peas and the white kidney beans to the pot of water.
  4. Drain de pasta, pour the pesto over the pasta and toss. Add the roasted veggies to the pasta
  5. Garnish with the artichoke hearts and the fresh arugula
