Quinoa Tabbouleh

Ingredients
- 1/2 cup quinoa, dry
- 2 cups loosely packed, finely chopped parsley (about 1 bunch)
- 2 small green onion finely chopped
- 2 roma tomatoes diced
- 1 lemon, juice and zest
- 3 tbsp olive oil
- salt and pepper to taste
Instructions
- Cook the quinoa according to the package directions and refrigerate
- Put the chilled quinoa in a bowl , add the rest of the ingredients and toss.
- Refrigerate until ready to serve.
- Serve cold or at room temperature.
