Ingredients
  1. 1/2 cup quinoa, dry
  2. 2 cups loosely packed, finely chopped parsley (about 1 bunch)
  3. 2 small green onion finely chopped
  4. 2 roma tomatoes diced
  5. 1 lemon, juice and zest
  6. 3 tbsp olive oil
  7. salt and pepper to taste
Instructions
  1. Cook the quinoa according to the package directions and refrigerate
  2. Put the chilled quinoa in a bowl , add the rest of the ingredients and toss.
  3. Refrigerate until ready to serve.
  4. Serve cold or at room temperature.
