Coconut Macaroons

Ingredients
- 2 cups of unsweetened shredded coconut
- 1 tsp of vanilla extract
- 3/4 cup + 3 tbsp of coconut milk
- 2 tbsp of corn starch
- 5 tbsp of maple syrup
Instructions
- Preheat the oven to 350 F .
- Mix together the 3 tbsp of coconut milk and the cornstarch in a small bown until there is no lump and set aside.
- Put the remaining coconut milk in a pot, vanilla and maple syrup in a pot and bring to a boil while stirring to prevent burning.
- Add the corn starch mixture to the pot while constantly wisking until the mixture thicken and start to bubble.
- Turn off the heat, add the coconut and mix with a spatula.
- With a small ice cream scoop, drop the mixture onto a parchment paper covered baking sheet and put in the oven for 10 to 15 minutes and finish it with broil until lightly brown.
Notes
- These macaroons can also be piped with a big star shaped pastry tip.
