Coconut Macaroons

Ingredients
  1. 2 cups of unsweetened shredded coconut
  2. 1 tsp of vanilla extract
  3. 3/4 cup + 3 tbsp of coconut milk
  4. 2 tbsp of corn starch
  5. 5 tbsp of maple syrup
Instructions
  1. Preheat the oven to 350 F .
  2. Mix together the 3 tbsp of coconut milk and the cornstarch in a small bown until there is no lump and set aside.
  3. Put the remaining coconut milk in a pot, vanilla and maple syrup in a pot and bring to a boil while stirring to prevent burning.
  4. Add the corn starch mixture to the pot while constantly wisking until the mixture thicken and start to bubble.
  5. Turn off the heat, add the coconut and mix with a spatula.
  6. With a small ice cream scoop, drop the mixture onto a parchment paper covered baking sheet and put in the oven for 10 to 15 minutes and finish it with broil until lightly brown.
Notes
  1. These macaroons can also be piped with a big star shaped pastry tip.
