Vegan Tofu Feta Cheese

Ingredients
  1. 1 package of extra firm tofu, about 400 g
  2. 1 tbsp white miso
  3. 3 tbsp water
  4. 2 tbsp lemon juice, about 1 big lemon
  5. 1 tbsp rice vinegar
  6. 1 tbsp olive oil
  7. 1 tbsp nutritional yeast
  8. 1 teaspoon dried oregano
  9. 1 bay leaf
  10. ½ tsp salt
  11. pepper to taste
Instructions
  1. Drain the tofu, cut into 1 inch cubes and freeze on a parchemin paper covered baking tray so that it doesn't stick together.
  2. Mix together the miso and water until there is no lumps and then add the reste of the ingredients and mix.
  3. Put the frozen tofu in the marinade and let it defrost in the fridge.
  4. The tofu will be at its best after 12 hours of marinating but will be ready to eat after 3 hours of marinating.
