Vegan Tofu Feta Cheese

Ingredients
- 1 package of extra firm tofu, about 400 g
- 1 tbsp white miso
- 3 tbsp water
- 2 tbsp lemon juice, about 1 big lemon
- 1 tbsp rice vinegar
- 1 tbsp olive oil
- 1 tbsp nutritional yeast
- 1 teaspoon dried oregano
- 1 bay leaf
- ½ tsp salt
- pepper to taste
Instructions
- Drain the tofu, cut into 1 inch cubes and freeze on a parchemin paper covered baking tray so that it doesn't stick together.
- Mix together the miso and water until there is no lumps and then add the reste of the ingredients and mix.
- Put the frozen tofu in the marinade and let it defrost in the fridge.
- The tofu will be at its best after 12 hours of marinating but will be ready to eat after 3 hours of marinating.
