Fish Taco with Baja Sauce

Fish Taco
- 1 package of gardein fishless filets
- 6 small flour tortilla
- 1 avocado sliced
- 1/2 cup shredded red cabbage
- 1 recipe of Fresh Mango Salsa
- cilantro for garnish
- 1 lime, cut into wedges
Baja Sauce
- 1⁄4 cup of red bell pepper, seeded and roughly chopped
- 1/2 jalapeno, seeded and roughly chopped
- 2 tbsp roughly chopped shallot
- 1/2 tbsp apple cider vinegar
- 1/2 garlic clove
- 1/4 tsp cumin
- 1/2 cup vegan mayo
Fish Taco
- Cook the fishless filets according to package instructions.
- Heat slightly the flour tortilla in a skillet.
- Garnish the tortilla with the cabbage, avocado and salsa. Add the filets on top and drizzle the sauce on top.
- Serve with a wedge of lime
Baja Sauce
- Put all the ingredients and 2 tbsp of mayo in a food processor or a blender and mix until smooth
- Add to the rest of the mayo and mix with a whisk.
