Fish Taco
  1. 1 package of gardein fishless filets
  2. 6 small flour tortilla
  3. 1 avocado sliced
  4. 1/2 cup shredded red cabbage
  5. 1 recipe of Fresh Mango Salsa
  6. cilantro for garnish
  7. 1 lime, cut into wedges
Baja Sauce
  1. 1⁄4 cup of red bell pepper, seeded and roughly chopped
  2. 1/2 jalapeno, seeded and roughly chopped
  3. 2 tbsp roughly chopped shallot
  4. 1/2 tbsp apple cider vinegar
  5. 1/2 garlic clove
  6. 1/4 tsp cumin
  7. 1/2 cup vegan mayo
Fish Taco
  1. Cook the fishless filets according to package instructions.
  2. Heat slightly the flour tortilla in a skillet.
  3. Garnish the tortilla with the cabbage, avocado and salsa. Add the filets on top and drizzle the sauce on top.
  4. Serve with a wedge of lime
Baja Sauce
  1. Put all the ingredients and 2 tbsp of mayo in a food processor or a blender and mix until smooth
  2. Add to the rest of the mayo and mix with a whisk.
