Lemon Roasted Artichoke

Ingredients
  1. 3 big artichokes
  2. 3 tbsp olive oil
  3. 6 to 10 tbsp of lemon juice
  4. salt & pepper
  5. 1 recipe of "Honey" and Mustard Dipping Sauce
Instructions
  1. Preheat oven to 375 F
  2. Remove the tough and damaged outer leaves of the artichokes
  3. Cut off the top of the artichoke with a knife and the tips with scissors.
  4. Cut each artichoke in half and remove the choke with a spoon.
  5. Rub the cut and the cavity where the choke was with lemon juice to prevent browning.
  6. Place the artichokes on a parchment paper covered baking sheet , drizzle with olive oil and season.
  7. Fill the cavity where the choke was with lemon juice.
  8. Roast for 30 to 45 minutes, or until the artichokes heart is soft.
  9. Serve with the dipping sauce.
