Lemon Roasted Artichoke

Ingredients
- 3 big artichokes
- 3 tbsp olive oil
- 6 to 10 tbsp of lemon juice
- salt & pepper
- 1 recipe of "Honey" and Mustard Dipping Sauce
Instructions
- Preheat oven to 375 F
- Remove the tough and damaged outer leaves of the artichokes
- Cut off the top of the artichoke with a knife and the tips with scissors.
- Cut each artichoke in half and remove the choke with a spoon.
- Rub the cut and the cavity where the choke was with lemon juice to prevent browning.
- Place the artichokes on a parchment paper covered baking sheet , drizzle with olive oil and season.
- Fill the cavity where the choke was with lemon juice.
- Roast for 30 to 45 minutes, or until the artichokes heart is soft.
- Serve with the dipping sauce.
