Ginger and Lemongrass Tofu

Ingredients
- 1 lb of firm tofu, preferably pressed
- 1 tbsp finely chopped lemon grass, just the softer inside part
- 1.5 tbsp finely grated peeled ginger
- 3 tbsp tamari
- 2 tbsp maple syrup
- 1tsp of tomato paste
- 1 tbsp rice vinegar
- 1tbsp sesame oil
- 1 clove of garlic minced
- black pepper to taste
Marinating
- Cut the tofu in 1 inch thick slices and place in a baking sheet.
- Put all the rest of the ingredients in a bowl, mix and pour over the tofu, making sure it is all covered.
- Let the tofu marinate for a minimum of 30 minutes, flipping the tofu from time to time.
Cooking
- Preheat the oven at 400 F.
- Place the marinated tofu on a parchment covered baking sheet.
- Bake for a total of 30 minutes, flipping the tofu after 20 minutes has passed.
