Ingredients
  1. 1 lb of firm tofu, preferably pressed
  2. 1 tbsp finely chopped lemon grass, just the softer inside part
  3. 1.5 tbsp finely grated peeled ginger
  4. 3 tbsp tamari
  5. 2 tbsp maple syrup
  6. 1tsp of tomato paste
  7. 1 tbsp rice vinegar
  8. 1tbsp sesame oil
  9. 1 clove of garlic minced
  10. black pepper to taste
Marinating
  1. Cut the tofu in 1 inch thick slices and place in a baking sheet.
  2. Put all the rest of the ingredients in a bowl, mix and pour over the tofu, making sure it is all covered.
  3. Let the tofu marinate for a minimum of 30 minutes, flipping the tofu from time to time.
Cooking
  1. Preheat the oven at 400 F.
  2. Place the marinated tofu on a parchment covered baking sheet.
  3. Bake for a total of 30 minutes, flipping the tofu after 20 minutes has passed.
