Healthy Low-fat Banana Bread

Healthy Low-fat banana bread – A vegan, starch solution compliant treat that is free of refined sugars and full of goodness!

The trick to making a low-fat banana bread that is flavourful and moist is using the right kind of bananas. In this case, we need over-ripe bananas, but not just spotty bananas. I mean bananas darker than my soul.

 

But no one likes waiting for bananas to ripen when they want to eat banana bread RIGHT NOW !!   What I do is I freeze peeled over-ripe bananas whenever I end up forgetting I had them and left them too long on the counter (which let’s be honest, is every time I buy bananas). So I always have over-ripe bananas on hand. They are also useful in replacing eggs in certain recipes.

Also, this recipe contains applesauce, which brings a natural sweetness and moisture to this recipe. But let’s be honest, I hate opening a big pot of applesauce for recipes because I know I’m just going to forget it in the fridge. Do you see the common theme ??? Luckily, this recipe was made so that it needs exactly one individual applesauce cup, you know, the ones kids bring to school ?? So there is no waste of product because you forgot that applesauce in your fridge for the last 3 years.

 

Also, you don’t have to put cacao nibs in your bread, but I like it because it adds a similar texture to nuts without all the extra fat.

Wet ingredients
  1. 400 g ( 4 un) over-ripe bananas
  2. 80 g (1/4 cup) maple syrup
  3. 110 g ( 5 tbsp) unsweetened applesauce
  4. 5 g ( 1 tsp) vanilla extract
Dry ingredients
  1. 270 g ( 1 ½ cup ) unbleached flour
  2. 5 g ( 1 tsp) baking powder
  3. 7 g ( 1 tsp) baking soda
  4. 4 g ( ½ tsp) salt
  5. 5 g (1 tbsp) cinnamon
  1. 20 g ( 2 tbsp) cacao nibs, optional
  2. 1 banana for garnish, optional
Instructions
  1. Preheat your oven to 350 F.
  2. With a fork, mash the over-ripe bananas with the maple syrup until it is forming a still slightly chunky paste.
  3. Add the rest of the wet ingredients to the banana mixture and mix.
  4. In a separate bowl, mix together the dry ingredients.
  5. Mix the dry ingredients to the wet ingredient without over mixing.
  6. Add the cacao nibs (optional).
  7. Pour the mixture into a 9x5 inch mold and garnish with the banana sliced lengthwise.
  8. Cook for about 1 hour, or until cooked through.
  9. Enjoy.
