Cheezy Sauce

Ingredients
- 1.5 cups potatoes, peeled and diced
- 1 cup carrots , peeled and diced
- 1 medium onion, peeled and diced
- ⅓ cup unsalted cashews
- ½ cup of cooking water
- 1 teaspoon salt
- 1 tablespoon lemon juice
- ½ cup nutritional yeast
- 2 clove of garlic
- Dash of hot sauce (optional)
Instructions
- Put the potatoes, carrots, onion, cashews, garlic cloves in a pot, cover with 2 inches of water and boil until the potato and carrots are really soft.
- Put aside 1/2 cup of the cooking water and drain the rest of the water.
- Blend all the ingredients, including the water, on high in a blender until the mixture is smooth.
- Adjust the seasoning.
Notes
- Store in refrigerator for up to a week.
